Lenten menu at the club-restaurant "Moscow"
Chef Vladimir Shchepilov has developed a special menu that will delight guests of the "Moscow" club-restaurant during Lent.
In the cold appetizers section – avocado carpaccio with raspberry, dressed with a ponzu-based dressing with truffle addition, as well as Uzbek tomato carpaccio with Kalamata olives, caper buds, and onion pesto. The section is complemented by hummus with roasted cauliflower and tomatoes, dressed with olive vinaigrette.
Tomato salad with quinoa is served in avocado slices with arugula and sun-dried tomatoes. Vegetable salad with hummus is dressed with olive tapenade and sprinkled with a seed mix. The salad with spicy greens and grilled vegetables combines zucchini, broccoli, avocado cream, green adjika, and baked hazelnuts.
Among the first courses – minestrone based on stewed vegetables and cream soup of baked pumpkin with thyme and sage.
In the hot dishes – grilled parsnip with avocado tartare and eggplant cream, baked eggplant with tomatoes and tahini, Carnaroli risotto with green vegetables, and buckwheat with white mushrooms and truffle paste.
In the dessert section – apple tart tatin on lean puff pastry with orange caramel sorbet.
